LA TABLE DE CHARLOTTE is a high-end caterer headquartered in Saint-Cannat, 10 minutes from Aix-en-Provence. Its revenue is expected to be €3.2 million in 2024, and it employs 10 full-time staff: the two managers Eric and Charlotte, a maître d'hôtel, a chef supported by a second chef, two chefs de partie, a pastry chef, a logistics manager, and an executive assistant.
Its creations are made in its 1,000 m² laboratory, which can accommodate up to 15 cooks in production. It favors locally produced foods, focusing on seasonal or fair-trade fruits and vegetables, minimising the carbon impact of product transportation and favouring simplified packaging, such as porcelain, glass, or bamboo containers, to limit the use of plastic. The "quality process" implemented on its premises and its best practices guarantee high-level food safety, recognised in particular by the "Eurofins" label (annual audit).
La Table de Charlotte hosts more than 500 cocktail receptions each year for 30 to 2,000 people, and around thirty weddings in the most prestigious venues in the Aix-Marseille region.
This high-end caterer can pride itself on having attracted prestigious clients in the PACA region, with companies such as LVMH, Printemps, Toyota, Bouygues, Audi, Grand Théâtre de Provence, BNP, Banque Martin Maurel, Orange, Airbus, and festivals (Piano/La Roque d'Anthéron, Art Lyrique/Aix en Provence), as well as the magnificent Granet Museum.

Wishing to "hand over" and ensure the company's long-term future, Eric and Charlotte Paillarès mandated LINKERS, one of our Partners in France, to approach industry players in the context of an industrial sale.
FS & Co, headed by Fayçal Saadi, perfectly matched what they sought. Having managed COFRAPEX, a global catering, supply, and export company, for over 20 years, Mr. Saadi appeared to be a legitimate player in the sector. His stated desire to build a high-end restaurant group based in Provence truly appealed to the long-standing partners of LA TABLE DE CHARLOTTE.
Fayçal Saadi now wishes to expand this activity to the entire southeast of France, particularly to the Savoie region, where demand is strong.
